Akbari pistachio in compare with other types, it is the longest one. It is easy to open. It has a darkest skin among the other varieties.

  • Ahmad Aghaei (Long Pistachio)

Ahmad Aghaei is another type of Long Iranian pistachios. Ahmad Aghaei pistachio is bigger and thicker than Fandoghi Pistachio and has a great taste. This type of pistachio is the most common. It has whitest  shell collor.

  • Fandoghi Pistachio (Round Pistachio)

Round pistachio (Fandoghi in shape and appearance) is smaller than other kinds of pistachio and larger than hazelnut. Because of its small size, the number of Round pistachios in one kilogram is more than other types.

  • Kale Ghoochi (Jumbo Pistachio)

Jumbo pistachios are larger and longer compared with round pistachios. As its name suggests, this type is big and round. Jumbo pistachio is one of the Round cultivars. Since the kernel of Jumbo pistachio is bigger than other verities, this is probably one of the reasons that most of Arabic countries prefer to purchase this type of pistachio.

Its uptrained from unripened pistachios, sun-dried

Based on its green color, it has different grades:

-Superior grade: 90% green

-Excellent grade: 80% green

-Grade 1: 70% Green

-Grade 2: 60% Green

It is from closed shelled pistachio.

C-Peeled Pistachio Kernel

Green pistachio peeled kernel is also commonly known as Calac or Tow shells. It is mainly used in chocolate, pastry, ice cream and sausage industries. The market gives premium prices to the more intense green coloured kernels. The quality of this type is based on its color and the higher the color of the pistachio kernel is the higher the quality. Usually, the pistachio kernels are classified into the English alphabet.

They are divided according to the color:

  • Grade S: Super Green (dense dark green)
  • Grade A: dark green
  • Grade B: light green
  • Grade C: light green & yellowish green
  • Grade D: yellowish green
  • Grade F: green slivered kernels
  • Grade G: yellow slivered kernels
